Herring
Apple Cider
Vinegar
2 small salt
herring
1 large
sliced onion
3
tablespoons brown sugar
1 cup cider
vinegar
¼ cup water
A few bay
leaves
Small
teaspoon white pepper
Soak the
herrings in cold water overnight. Dry them and then remove the skin and bones.
Slice them into equal sized narrow pieces, arrange them in a dish. Mix all the
other ingredients together and pour them over the fish. Cover and leave in a
refrigerator for at least eight hours for the flavors to blend.

1 half
peeled and seeded cucumber
150g carton
plain yogurt
1 tablespoon
cider vinegar
1 teaspoon
corn oil
Milk
1 tablespoon
chopped mint
· Crate the cucumber and blend it with
the yogurt.
· Season to taste, add the oil and cider
vinegar, mix well.
· Add the cold milk until it is the
required consistency.
· Chill well and just before serving
put into bowls and sprinkle with the chopped mint.
