Apple Chutney
















Ingredients

1 liter apple cider vinegar
1 kilo peeled and cored apples
450g brown sugar
450g raisins
45g onions
25g mustard powder
1 teaspoonful cayenne pepper
1 teaspoon salt
Chop all ingredients coarsely. Cook about one hour or until tender.
Pour into hot jars and seal.

Peach Chutney
Ingredients

Use slightly unripe peaches.
1 kilo peaches
450g brown sugar
575 apple cider vinegar
225g sultanas
25g chili powder
1 teaspoonful ginger powder
Peel the peaches. Halve them and remove the stones. Bring half the cider vinegar to the boil with the brown sugar, lower the halved peaches into the liquid. Simmer until they are soft. Add all the remaining ingredients. Simmer until thick and bottle. This is best matured for a few weeks to bring out the flavor.

Banana Dressing
Ingredients

2 tablespoons apple cider vinegar
1 tablespoon natural yogurt
2 bananas
Some mixed herbs
1 tablespoon sunflower oil
Salt and pepper
Crush the banana with a fork until it becomes smooth and creamy. Add the yogurt and then the herbs. Mix well. Add the cider vinegar and the oil. Mix thoroughly.

Pickled Herring Recipe
















Pickled Herring
Apple Cider Vinegar
2 small salt herring
1 large sliced onion
3 tablespoons brown sugar
1 cup cider vinegar
¼ cup water
A few bay leaves
Small teaspoon white pepper

Soak the herrings in cold water overnight. Dry them and then remove the skin and bones. Slice them into equal sized narrow pieces, arrange them in a dish. Mix all the other ingredients together and pour them over the fish. Cover and leave in a refrigerator for at least eight hours for the flavors to blend.


Cucumber Soup

















Cucumber Soup
1 half peeled and seeded cucumber
150g carton plain yogurt
1 tablespoon cider vinegar
1 teaspoon corn oil
Milk
1 tablespoon chopped mint
·       Crate the cucumber and blend it with the yogurt.
·        Season to taste, add the oil and cider vinegar, mix well.
·       Add the cold milk until it is the required consistency.
·       Chill well and just before serving put into bowls and sprinkle with the chopped mint.

More Uses for Apple Cider Vinegar


Stop Potatoes Turning Brown
Add a good splash of cider vinegar to the water into which you slice potatoes. When you have finished you can dry them, prior to frying, with far less chance of their going brown.

Steaming Vegetables.
When you cook vegetables by steaming them, there is less vitamin and mineral loss this way. Add two teaspoonful of cider vinegar to the water you use. This helps the vegetables keep their color without the vitamin C depleting effect that comes from using bicarbonate of soda.

Sore Throat
Mix this special gargle which will give instant relief.
275 ml apple cider vinegar
100g honey
25g red sage

Heat the cider vinegar with the herbs until it is almost, but not quite, boiling. Do not use an aluminium pan. Allow to cool slowly. Strain after 24 hours, add the honey, stir until dissolved. Bottle and close securely. Use two teaspoonfuls in half a glass of water.
