Honey and Cider Vinegar


After reading Dr Jarvis’s little book on apple cider vinegar years ago, I was convinced of cider vinegar many health benefits. Dr Jarvis recommends a mixture of honey and cider vinegar. Take two teaspoons each of the two ingredients or whatever combination suits you best. A prepared mixture, can be bought. If you mix your own, be sure to use an unblended pure honey. It does not matter if it is set or clear. Do not heat the mixture, as this is not good for certain constituents. The mixture is especially effective for hay fever and for asthma. 
























Apple Cider Vinegar is Anti-fungal
Apple cider vinegar has anti-fungal, antiviral and anti-bacterial properties. While apple cider vinegar contains acetic acid, once the cider vinegar is metabolized in the body, it turns alkaline. Take one teaspoon in a small glass of water, twice a day. It has to be apple cider vinegar, made from fermented apples.

Recipes For Sweet and Sour Sauce and Other Sauces

Sweet and Sour Sauce
Ingredients
8 tbsp cider vinegar
8 tbsp honey
1 small sweet green pepper finely chopped
1 clove crushed garlic
1 tbsp chopped almonds

Instructions
Add the ingredients into a saucepan
Mix well, heat up and add up to half a pint of stock.

Worcestershire Sauce
2 tsp pimento
1 tsp clove
1 tsp black pepper
1 tsp ginger
1 tsp chili powder
25g curry powder
50g mustard
50g shallots
50g salt
225g brown sugar
100g tamarinds
575 ml sherry
1 liter cider vinegar
caramel

Instructions
Mix all the ingredients together, except the sherry.
Simmer for an hour
Top up with cider vinegar if necessary due to evaporation
Add the sherry and a little caramel
Let stand for a week.
Strain and bottle


Mint Sauces
One large bunch of mint
Chop finely
Add one teaspoon brown sugar
Cover with cider vinegar
Let stand for thirty minutes.




Tartare sauce
Ingredients
175 ml mayonnaise
1 chopped hardboiled egg yolk
1 medium sized grated onion
1 tbsp chopped chives
2 tsp cider vinegar
1 tbsp finely chopped parsley
1 tbsp chopped capers
2 tsp cider vinegar

Instructions
Mix all the ingredients well and let stand for an hour.

Salad Dressings



Nutty Salad Dressing
Lovely with rice or other flavored salads
2 tbsp apple cider vinegar
1 tbsp corn oil
 ¼ teaspoonful mustard powder
1 teaspoon mixed herbs
1 egg yolk
1 tbsp mixed chopped nuts
1 small apple chopped
Mix all the ingredients together
Except nuts and apple .
Add these last.

Banana Dressing
2 tbsp apple cider vinegar
1 tbsp corn oil
1 tbsp natural yogurt
Salt and pepper
Half teaspoon mixed herb
2 bananas

Instructions
Crush the banana with a fork until smooth and creamy
Add the yogurt and the herbs. Mix well.
Add the apple cider vinegar and oil
Mix well.






















Fruit Cider Vinegar
You can use any soft fruit for this vinegar.
Add 575 apple cider vinegar to 450g of fruit
Leave to stand for 3 days, stirring occasionally
Strain the liquid, pressing out as much as possible of the fruit pulp
Add 225g of brown sugar to each 575ml.
Boil for ten minutes and add to warmed bottles.
Use the vinegar for dressings or a health drink by adding more sugar.
